Rhubarb & Strawberry Oat Bars (Lactose Free)

I’m excited to announce that it’s heading towards str-ubarb season. So what better way to celebrate than tasty lactose free rhubarb & strawberry oat bars!

 

Ingredients

80g rolled oats
95g all-purpose flour
95g light brown sugar
Heaped 1/4 tsp table salt
85g Flora Dairy Free, melted
1 tsp cornstarch (optional)
1 tbsp lemon juice
1 tbsp granulated sugar
125g diced rhubarb
155g diced strawberries
Icing sugar for dusting

Method

Heat oven to 375 degrees F / 190 degrees C.

Place oats, flour, brown sugar and salt in bottom of baking pan and mix.

Pour melted butter over, and stir until clumps form. If the clumps feel soft or look overly damp, add an extra 2 tbsp of flour. Set aside about 95g of this crumble mixture.

Press the rest of the crumb mixture evenly in the bottom of the pan.

Spread half the fruit over the crumble. Sprinkle it evenly with cornstarch, then lemon juice, and 1/2 tablespoon of granulated sugar.

Spread remaining fruit over this, and top with second 1/2 tablespoon sugar. Scatter reserved crumbs over fruit and bake bars for 30 to 40 minutes, until fruit is bubbly and oats are golden.

Leave to cool, then cut into squares and sprinkle with powdered sugar before serving.
